Make Gluten-Free Carrot Cake Using KitchenAid Stand Mixer Accessories

Ingredients


Cake

  • Virgin coconut oil - ½ cup
  • Almond flour - 3 cups
  • Kosher salt - 1 ½ tsp
  • Baking powder - 1 tsp
  • Ground cardamom - 1 tsp
  • Ground cinnamon - 1 tsp
  • Ground ginger - 1 tsp
  • Baking soda - 1 tsp
  • Large eggs - 5
  • Dark brown sugar - 1 ¼ cups
  • Vanilla extract - 1 tsp
  • Carrots, coarsely shredded and squeezed firmly to get rid of excess water - 10 oz.
  • Shredded coconut (unsweetened) - ¾ cup
  • Walnuts - ¾
  • Golden raisins - ½ cup

Frosting and Assembly

  • Cheese cream - 8 oz.
  • Butter (unsalted) - ½ cup
  • Gluten-free sugar (powdered) - 1 ¼ cups
  • Greek yogurt - ⅓ cup
  • Vanilla extract - 1 tsp
  • Kosher salt - 1 pinch

Recipe

  • Preheat the oven to 350 degrees.
  • Grease parchment-lined round cake pans with oil and dust them with some almond flour.
  • Add salt, baking powder, cinnamon, cardamom, baking soda, ginger, and 3 cups of flour in a large bowl.
  • Attach your KitchenAid stand mixer accessory - beater - to the electric mixer and into a large bowl start beating eggs and brown sugar until it turns more than triple in volume.
  • Now, add some vanilla extract and beat that as well.
  • In a separate medium-sized bowl toss carrots, raisins, coconut, and the remaining ½ a cup of oil.
  • Reduce the speed of the mixture to low and add 3 additions of flour mixture and then 3 additions of carrot mixture to the egg mixture. Ensure you beat the mixture well after each addition.
  • Add the prepared batter in the pans, bake until lightly brown which would take at least 33-36 minutes.
  • Once baked and out of the oven, let the cake cool for a few minutes and release it from the pan. Finally, let it cool completely.

Frosting and Assembly

  • In a stand mixer attach the wire whisk and start beating cream cheese and butter in a large bowl at a medium-high speed. Continue until it turns very smooth.
  • Now reduce the mixer speed and add some powdered sugar.
  • Add some yogurt, salt, and vanilla extract to it and increase the speed from medium to high.
  • Whisk the ingredients again until it turns light and airy.
  • Chill the mixture to let it stiffen slightly to reach a separable consistency.
  • Finally, take the cake you have prepared and cover it with one-third frostig from top and sides.
