How to Make Fresh Mushroom and Cream Pasta With a Stand Mixer

Making your favourite pasta dish from scratch might seem a little difficult, however, when prepared using the right stand mixer attachments, it would not require much effort. While the packed pastas or the pasta from your nearby restaurant might taste just fine, nothing can beat the freshness of home cooked pasta. Ingredients


  • Semolina flour - 1 ½ cups
  • All purpose flour  - 1 ½ cups
  • Whole eggs - 4
  • Olive oil - 2 tbsp
  • Garlic - 4 cloves
  • Cremini mushrooms - 1 pound
  • Heavy cream - ½ cup
  • Water - 2 tbsp
  • Butter - 2 tbsp
  • Shallot - 1
  • Chopped parsley - ¼ cup
  • Pepper
  • Salt


Preparation


  • Add the semolina and the all purpose flour in the bowl of your stand mixer and make a well in the center.
  • In a separate bowl beat 4 eggs and pour the beaten eggs into the well. Attach the beater to the stand mixer, fix the speed at two and start beating the ingredients until the dough comes together.
  • Now attach a dough hook and knead the dough until it becomes slightly elastic. Once done wrap the dough in plastic wrap and allow to rest for 20-30 minutes.
  • Later, cut the dough into 4 equal pieces.
  • Now, fit the pasta roller attachment to your stand mixer. Take one of the four pieces of dough and roll it through the pasta roller on the first setting, at least four times, folding it after each pass through.
  • Now turn it to the second setting and roll the pasta twice through the attachment. Next,, put it on the third setting and pass it twice through the pasta maker attachment.
  • Repeat the same steps with the remaining pieces of dough.
  • Once done rolling out the sheets, fix the pasta cutter attachment to your stand mixer and pass the sheets through the attachment and cut into fettucini. To prevent the pasta from sticking, toss it with all purpose flour.
  • Boil water in a pot and cook the pasta in it for at least 2-3 minutes until done.
  • Heat olive oil in a skillet at a medium flame. Add the mushrooms, and cook them until they turn brown. Next, add shallots and garlic, continue cooking until they soften, and add butter.
  • Now using a whisker, whisk some heavy cream and parmesan cheese. Add this mixture to your mushrooms. Cook until it thickens slightly. Add salt and pepper as per taste. 
  • Finally add the noodles, stir well and your freshly made mushroom and cream pasta is ready to be served.
